ORGANOLEPTIC CHARACTERISTICS:
It has a straw yellow colour with subtle golden reflections, brilliant and with good consistency. The olfactory sensations are intense and persistent, very fine and elegant, with aromatic notes of sage, Mediterranean scrub and milder inclusions of citrus fruits and wild flowers. It is rich, smooth and full on the palate, supported however by pleasant notes of flavour and freshness that portend an excellent capacity for evolution. In the pre-fermentation phase the skins are subjected to a brief maceration with the must for about 18 hours. Fermentation en blanc and resting on fine lees for 5 months. The vinification and maturation phases are carried out exclusively in steel.

13.5% alcohol content; Total acidity g/L: 5.40; pH: 3.40;

Volatile acidity g/L: 0.20; Sugar g/L: 1; SO2 total: 92mg/L; Net dry extract g/L: 22. does NOT contain sorbates.
